Ingredients

500g Turai (ridge gourd), peeled and cut into small cubes

1 cup Chana dalsoaked for at least 5 hours

2 tbsp Oil

1.5 tsp Cumin seeds

½ tsp Asafoetida (hing)

2 cloves Garlic, finely chopped

A few curry leaves
-
2 medium Tomatoes, finely chopped

Salt to taste

2 tsp Coriander powder
-
1.5 tsp Kashmiri red chili powder

1 tsp Turmeric powder
-
1 tsp Kitchen king masala

½ cup Water
-
2 tbsp Coarsely pounded roasted peanuts

Fresh coriander for garnish

Generally Turai (Ridge Gourd) is a humble sabzi not liked by most people, but if you cook it in a right way, with right spices, it is one of the best sabzi you would have ever had. Turai, also known as ridge gourd, is a low-calorie vegetable rich in dietary fiber, vitamins, and minerals. Its health benefits include promoting healthy digestion and aiding in weight loss due to its high fibre and water content. It is also known to support heart health, boost immunity, and help regulate blood sugar levels. So I will definitely recommend to add this sabzi to your menu. Also, this particular recipe you can even give in tiffin for lunch as it’s dry and stays good.

Peel & Cut 500 gm Turai in small cubes. |

In a kadai, add 2 tbs oil, once oil gets heated, add 1.5 tsp Jeera, 1/2 tsp Hing (am using flavorful Bhoj masale Hing). |

Once Jeera crackles, add a couple of cloves of finely chopped garlic, few curry leaves and sauté them on a slow flame till garlic gets golden color. |

Then add 2 medium size finely chopped tomatoes, salt as per taste, and let it cook for 5 minutes. |

Then add 2 tsp Dhania powder, 1.5 tsp Kashmiri Mirchi Powder, 1 tsp Haldi Powder and 1 tsp Kitchen King Masala (Am using Bhoj Kitchen King Masala which is very versatile and it’s Jain friendly without onion and garlic) |

Saute everything well, till you see oil is getting separated from the sides of kadai. |

Then add 1 cup soaked chana dal (soak for at least 5 hours). |

And add 1/2 cup water. Cover with the lead and let it cook till chana dal gets 80% (almost) cooked. |

Now add chopped Turai, again cover the kadai and let it cook till everything gets cooked properly. |

Now turn off the heat, add 2 tbs coarsely pounded roasted peanuts and fresh coriander. Serve this hot sabzi with roti, paratha, puri and even with chawal it will taste very good. |
