Vagharelo Bajri Rotlo is a traditional Gujarati dish made from bajra (pearl millet) flour, cooked into soft, thick rotis. After cooking, the rotlo is tempered with a flavorful mix of mustard seeds, garlic, green chilies, and cumin in ghee or oil. The tempering infuses the rotlo with a rich, aromatic flavor. It’s often served with a dollop of ghee, chutney, or yogurt on the side. This dish is a hearty, nutritious comfort food, perfect for cold weather or as a wholesome meal.

In a mortar, grind together 1 tsp jeera, 5-6 garlic cloves, 1.5 tsp Kashmiri red chili powder, and salt to taste. Set this chutney aside. |

In a bowl, mix 1.5 cups of thick curd with 1 cup of water to make buttermilk. |

Heat 2 tbsp oil in a pan. Add 1 tsp rai (mustard seeds), 1 tbsp sesame seeds, 1 tsp finely chopped ginger, and the prepared chutney. Stir everything together and cook. |

Toss in 3-4 finely chopped green onion whites and 2 chopped tomatoes. Add the spices: 1/2 tsp haldi, 2 tsp dhaniya powder, 1/2 tsp garam masala, and 1/2 tsp hing. Stir well and let it cook. |

Pour in the prepared buttermilk, bring the mixture to a boil, and let it simmer for a few minutes. |

Break 2 Bajra Rotla into pieces and add them to the pan. Mix everything well. |
