Ingredients

2 cup pre cooked rice
2 tbsp Oil
10-12 cashews nuts
2 green chillies
1 tsp black peppercorns
4-5 cloves
1/2 inch cinnamon
2 small onions
1/4 cup carrot
1/4 cup fresh beans
1/4 cup green peas
1/4 cup cauliflower florets
Salt to taste
1/4 cup chopped cranberries

Veg Cranberry Pulao is a delightful and colorful rice dish that incorporates cranberries with a mix of assorted vegetables and aromatic spices. Cranberries are known for their high antioxidant content. Cook long-grain rice in advance and keep it aside. Heat oil in a pan. Add cashews and fry them slightly. Remove and set them aside.

Add black peppercorns, cloves, and cinnamon to the hot oil. Add sliced onions and fry until they turn golden brown.

Add blanched vegetables such as carrots, green peas, fresh beans, and cauliflower. Mix well and add salt. Cover and cook for 7 to 8 minutes on low flame.

Add the pre-cooked rice to the pan with the vegetables. Mix everything well. Add chopped US cranberries to the rice and vegetable mixture. Mix thoroughly.
