Veg soya thalipeeth is a nutritious Indian flatbread made from a blend of flours, including soy flour. The dough is typically enriched with finely chopped vegetables like onions, tomatoes, and green chilies. Spices like cumin seeds, turmeric, and coriander powder add flavor. The mixture is rolled into small discs and cooked on a griddle until golden brown. Serve hot with yogurt or chutney for a wholesome meal or snack.

Soak 1.5 cups of soya chunks in warm water for 30 minutes, then grind them coarsely in a mixer. |

Transfer the ground soya chunks to a mixing bowl and add 3 tablespoons of gram flour. |

Mix in carom seeds, cumin seeds, turmeric powder, red chilli powder, salt, finely chopped green chillies, ginger, garlic, onion, carrot, and coriander. |

Combine everything by hand and heat a pan with oil, wiping it with a tissue. |

Spread handfuls of the mixture on the hot pan, make holes, drizzle oil around, and cook for 7-8 minutes until golden brown on both sides. Serve hot with curd and green chutney. |
