Chena payas is a traditional Indian dessert originating from the state of West Bengal. It is made by simmering chena (fresh cheese curds) or paneer in sweetened milk flavored with cardamom. Heat 1 liter of full-fat milk in a pan until it starts to simmer. |

Dilute 2 tablespoons of vinegar with 2 tablespoons of water. Mix well. |

Add the diluted vinegar mixture to the milk, stirring gently until the milk curdles. |

Place a muslin cloth in a sieve and pour the curdled milk into it. Rinse with a glass of water to clean it. |

Hang the muslin cloth with the curdled milk to drain excess water and form paneer. Set it aside. |

Now, for the kheer, heat another 1 liter of full-fat milk in a separate pan until it reduces to half its original volume. |

Add 4-5 cardamom pods, powdered, to the milk. |

Gently mash the prepared paneer and add it to the milk, stirring with a spatula. |

Put 3 tablespoons of jaggery powder into the mixture, giving it a good mix. |
