Ingredients

1 big bunch of Moringa Leaves (cleaned and washed)
1 cup soaked Moong (soaked in water for 5-6 hours)
1 small Ginger Knob
1 medium sized chopped Onion
3-4 Garlic Cloves
Salt as per taste
1.5 cup water
1 spoon Butter
1/2 tsp Carrom Seeds (Ajwain)
1/2 tsp Cumin Seeds (Jeera)

Moong & Moringa Soup is a nutritious and flavorful dish made from yellow moong dal (lentils) and moringa leaves. Rich in protein, vitamins, and minerals, it supports immunity and overall health. The soup is often seasoned with spices like turmeric, cumin, and ginger for added flavor. Moringa, known for its antioxidant properties, enhances the soup’s health benefits. In a pressure cooker, add 1 cup of soaked moong dal (lentils). Add 1 cup of moringa leaves (or cut drumsticks as an alternative). Add 1 small knob of ginger, peeled. Add 1 medium-sized chopped onion. Add 3-4 garlic cloves, peeled. Add salt as per taste. Add 1 cup of water.

Fix the lid on the pressure cooker and cook up to 3 whistles. Once done, allow it to cool before opening the lid.

Transfer the boiled mixture into a mixer and churn it until smooth. Sieve the mixture through a food strainer to ensure a smooth texture.

Pour the strained mixture into a vessel and heat it up. Add 1/2 cup of water and mix well.

In a separate pan, heat 1 tablespoon of butter. Add 1/2 teaspoon of carom seeds (ajwain) and 1/2 teaspoon of cumin seeds (jeera) to the butter.

Once the seeds splutter, pour this tempering into the soup. Let the soup come to a boil, then turn off the heat.

Transfer the soup to a serving bowl. Squeeze half a lemon into the soup for added zest.
