1. My Secret Mexican Seasoning - Mix 2 tbs Oregano, 1 tbs onion powder, 1 tbs garlic powder, 2 tbs Kashmiri red chili powder, 2 tbs Coriander powder, 1 tbs roasted cumin seeds powder and salt as per the taste. - Mix everything well. |

2. Flavour Packed Fajita Mix - Heat the Pan. Add some oil and sauté 1 medium size onion, 1 cup mixed chopped into thin slices bell peppers, 1/2 cup boiled sweet corn and add few paneer or Tofu cubes. |

Add some salt and some 2 tsp Mexican seasoning. Saute for 5-7 minutes on high flame, take it out in a bowl. |

3. Hearty Smashed Beans - Heat up the pan, add some oil. Add finely chopped 1 medium size onion and some salt - sauté it. |

Next add 2 tsp Mexican seasoning, 3 medium size finely chopped tomatoes, and 2 tbs tomato ketchup. |

Mix everything well. Then add 1.5 cup boiled Rajma (kidney beans). - Mix everything and coarsely mash the beans. Take it out in a bowl. |

4. Zesty Homemade Sour Cream - Take 1 cup hung curd, into that add 1 lime juice, salt and 2 cloves finely chopped garlic. And mix everything, keep aside. |

5. Aromatic Herbed Rice - In a pan, take some butter and into that add 2-3 cloves finely chopped garlic, add 2 cup pre-cooked rice, salt as per the taste. Mix everything well. Turn of the heat and then add fresh coriander. Mix it well. |

6. Creamy Mashed Avocado - Take a ripe avocado, into that add salt and fresh lime juice. Mash it well. |

To Serve the Burrito Bowl - In a bowl take some salad leaves. On top of that place, 1 scoop fajita, next to that place 1 scoop beans mixture, then next to that place herbed rice, next to that place fresh tomato salsa. |
