Ingredients

3-4 slices of BreadYou can use buttered bread, burger buns, or simple pav.

1/2 cup PecansDry roasted and coarsely chopped.

Brown SugarA sprinkle for the top to create a crunchy, caramelized crust.

3 cups Regular Milk

1 tbsp Custard Powder

1/4 cup milk

2-3 tsp Instant coffee PowderAdjusted to your taste for that perfect caffeine kick.

1 tbsp Butter

sugarAdd as per your preference.

This Mother’s Day, we’re trading traditional gifts for quality time in the kitchen. There’s something incredibly special about messy counters and shared laughs while creating something delicious. My daughter and I decided to give the classic bread pudding a sophisticated twist with deep coffee notes and the crunch of toasted pecans.

Dry roast 1/2 cup pecans, once it cools down, coarsely chop them. |

Chop any thick 3-4 breads into cubes. (Any buttered bread or burger buns or simple pav will work) |

- Heat 3 cups (750 ml) regular milk. - Into that add diluted 1 tbs custard (1 tbs custard powder diluted in 1/4 cup milk) - Add sugar as per taste and 1 tbs butter. |

Now cook everything on low to medium flame until mixture becomes thick - it should coat the back of spoon. |

Turn off the heat and then add 2-3 tsp (as per your taste) instant coffee powder - Keep stirring the custard. |

Now in a mixing bowl, take cut bread into that add chopped pecans (keep some pecans aside) |

Pour the prepared custard (do not stir vigorously, just gently press all breads into the custard mixture. Make sure breads suck all the mixture) |

Now pour the mixture into well greased tray or individual cups. |

Sprinkle some brown sugar on top for extra crunch and sprinkle some chopped pecans too. |

Bake or Air fry this bread pudding on 190 degree pre-heated oven for 20 minutes. |

Once it’s done, serve it hot with vanila or chocolate ice cream. |
