The best part? It is incredibly versatile. If you want to keep it low-calorie and oil-free, you can skip the tadka entirely—it tastes absolutely wonderful on its own. Pair it with some spicy green chutney and a hot cup of chai for the perfect guilt-free meal.

In a mixing bowl, take 1.5 cup soaked moong dal (soaked for 2 hours). |

Into that add, 1/2 cup regular poha, 1/2 cup sooji (semolina), 1 cup sour curd and water as required for the consistency as shown in video. |

Mix everything and keep aside for half an hour. |

In that mixture, add 2-3 green chillies and small piece of ginger and now blend everything smooth. |

Now in this batter, add salt, 1/2 tsp turmeric, 1 tbs oil and whisk the batter in ONE DIRECTION for 5 minutes. |

Then add 1 tsp fruit salt (eno) OR for natural fermentation, leave this batter for 6 hours if you wish to avoid fruit salt. |

Mix the batter well and immediately pour it into well greased steamer plate (thali) and sprinkle some red chili powder on the top. |

Immediately put it for steaming on high flame for 20 minutes (ensure steamer is already ready piping hot when you are preparing dhokla batter). Do not forget to cover the steamer. |

- After 20 minutes, dhokla will be ready. You may enjoy it as such or for additional better taste, can add tadka - To make tadka- we need 2 tbs oil. Once it’s hot, add 1 tsp mustard seeds, 2 tsp white sesame seeds, 1/2 tsp hing powder and pour this hot tadka over steamed dhokla. |
