Zero-Waste & Substitutes Zero-Waste Kitchen: This recipe is already a brilliant masterclass in zero-waste cooking by finding a delicious second life for day-old rotis. To take it further, any tiny, crumbly bits left in the pan after rolling your ladoos can be saved in a jar and sprinkled over your morning yogurt or oatmeal for extra crunch. Substitutes: If you don't have jaggery on hand, coconut sugar works wonderfully. To make this vegan, simply swap out the ghee for melted coconut oil or a neutral plant-based butter. |
