I curated this iron-rich Gur Chana to satisfy midday cravings without turning to unhealthy packaged foods. It is incredibly crunchy, provides an instant energy boost, and is perfect for keeping on hand throughout the week.

Nutrition

This snack is an excellent source of plant-based protein from the chana and natural iron from the jaggery (which is traditionally processed in large iron vessels). The entire recipe yields roughly 8.5 mg of iron. This makes it highly beneficial for supporting healthy hemoglobin levels and maintaining sustained energy.Assuming 8 servings:

Steps

1
Done

Dry roast the chana on a medium flame for 7-8 minutes, then let it cool down.

2
Done

Remove the chilka.

3
Done

Heat a kadai. Once hot, add the water and jaggery.

4
Done

Let the jaggery cook on a medium flame for about 10 minutes. Drop a little melted jaggery into a bowl of water—once it forms a ball and becomes crispy like toffee, turn off or completely lower the heat.

5
Done

Add a pinch of salt, 2 tbsp white sesame seeds, and the roasted chana to the melted jaggery.

6
Done

Mix well, stir in 1 tbsp of ghee, and immediately pour the mixture onto parchment paper.

7
Done

Cover with a second sheet of parchment paper while the mixture is still hot and quickly roll it flat between the papers.

8
Done

Sprinkle extra white sesame seeds on top and let it sit at room temperature for 45 minutes to cool and set.

9
Done

Break into pieces and enjoy this crispy snack. (Tip: If you prefer not to roll the hot mixture, you can also shape it into laddoos.)

Zero-Waste & Substitutes
* Zero-Waste: Don't throw away the chana chilka (skins). You can grind them into a fine powder and mix them into your regular roti or thepla dough for an added fiber boost, or add them directly to your compost bin.

* Substitutes: Swap white sesame seeds for black sesame seeds or melon seeds. To make this completely dairy-free, substitute the ghee with a neutral cooking oil.
