For garlic chutney, coarsely crush 5-6 garlic cloves, 1 tsp cumin seeds, 1 tbsp Kashmiri red chilli powder, and salt. Transfer the chutney to a bowl. |

Mix 1 cup gram flour (besan), 2 tbsp rice flour, a pinch of turmeric powder, and salt. |

Gradually add water, mixing until smooth. Rest for 10 minutes. |

Combine 1/2 cup paneer with 1.5 cups finely chopped veggies (carrot, cabbage, capsicum, onion, coriander). |
