Caramelized makhana is a popular snack made from fox nuts (makhana) that are roasted and coated with a sweet caramel glaze. Dry roast 100 gm makhana on low-medium flame for 10-15 minutes until crispy. In a kadai, add 1 tbsp ghee and 1/2 cup jaggery. Stir in 2 tbsp water and let the jaggery melt. |

Once melted, add 1/2 tsp salt, 2 tsp dry ginger powder, crushed black pepper, 2 tsp fennel seeds, and 1/2 tsp turmeric. Mix well. |

Cook the jaggery until it becomes solid and brittle. To check, drop some melted jaggery in water and roll it between your fingers. If it solidifies, it's ready. |

Turn off the heat and mix in the roasted makhana and 2 tbsp roasted sesame seeds. Spread the mixture onto a greased tray and let it cool. |
