100g Makhana (fox nuts)
1 tbsp Ghee
1/2 cup Jaggery
2 tbsp Water
1/2 tsp Salt
2 tsp Dry ginger powder
Crushed black pepper (to taste)
2 tsp Fennel seeds
1/2 tsp Turmeric powder
2 tbsp Roasted sesame seeds

Caramelized makhana is a popular snack made from fox nuts (makhana) that are roasted and coated with a sweet caramel glaze. The process involves heating sugar, butter, and sometimes spices, then tossing the makhana in the mixture until they are crispy and golden. It’s a healthier alternative to traditional caramelized snacks, as makhana is low in calories, high in protein, and rich in fiber. The snack is commonly enjoyed as a guilt-free treat or an accompaniment with tea. It’s often customized with flavors like cinnamon or cardamom for extra taste.

Dry roast 100 gm makhana on low-medium flame for 10-15 minutes until crispy. In a kadai, add 1 tbsp ghee and 1/2 cup jaggery. Stir in 2 tbsp water and let the jaggery melt.

Once melted, add 1/2 tsp salt, 2 tsp dry ginger powder, crushed black pepper, 2 tsp fennel seeds, and 1/2 tsp turmeric. Mix well.

Cook the jaggery until it becomes solid and brittle. To check, drop some melted jaggery in water and roll it between your fingers. If it solidifies, it's ready.

Turn off the heat and mix in the roasted makhana and 2 tbsp roasted sesame seeds. Spread the mixture onto a greased tray and let it cool.

Once cooled, break into pieces and enjoy! Store in an airtight container at room temperature (no refrigeration).
