In a mixer jar, grind 200 gm lauki cubes, 2-3 chopped green chillies, and a small piece of ginger. |

Transfer the mixture into a mixing bowl. Add a small piece of grated carrot, some fresh coriander, red chilli powder, 2 tsp coriander powder, 1/2 tsp Haldi powder, garam masala (if using), salt, and sugar (if using). |

Mix in 1 tbs oil and squeeze the juice of 1 fresh lime. For binding, mix in 1/2 cup sooji and 1 cup regular roti atta. |

Adjust the consistency with water if needed; the dough should be semi-thick and not runny. |

Grease the steamer with oil and shape small portions of the dough into cylinder shapes, then place them in the steamer. |

Cover the steamer and steam for 20-25 minutes until the muthiya is cooked through. |

Once done, let the muthiya come to room temperature, then cut them. |

For optional tadka, heat oil in a pan and add mustard seeds, white sesame seeds, hing, and curry leaves. Toss in the muthiya. |
