To make Rajma Tikki - 1. In a chopper, combine all the tikki ingredients. 2. Pulse the chopper to coarsely blend everything together—keep the texture slightly chunky rather than a smooth paste. 3. Transfer to a bowl. Apply a little oil to your palms, take a small portion, and shape it into a tikki. 4.Shallow fry in oil until you get a golden color on each side (you can also airfry for a lighter version). |

To make the High Protein Wrap - 1. In a mixing bowl, combine the shredded carrots, paneer, shredded cheese, soaked flaxseed mixture, salt, and pepper. 2. Stir the mixture continuously until it becomes thick and uniform. If the mixture is too dry, add only 1 tbs water to help it bind. 3. Heat a pan on medium flame and grease it lightly. Spread a small portion on the tawa. Keep it slightly thick, like a chila—do not spread it too thin. 4.Crucial Step: Do not add any extra oil or butter to the pan while it cooks. 5. Let the wrap cook on medium flame until the bottom turns golden. No need to flip it. 6. * Once the upper surface looks dry, remove the wrap and let it cool down completely so it sets properly. |
