A delightful combination of wholesome, gluten-free Jowar Roti paired with the tangy goodness of Raw Mango Pithla, this traditional Maharashtrian dish is both nourishing and bursting with flavour. Jowar (sorghum) is a powerhouse grain, known for its high fibre content, essential minerals, and ability to provide long-lasting energy. The Raw Mango Pithla, prepared with fresh raw mangoes, is a tangy and mildly spiced dish made from besan (gram flour), which adds a smooth, comforting texture. Together, these two components create a delicious, healthy meal that is perfect for any time of the day.

In a mixing bowl, take 1 cup jowar atta. Add approx 1/2 cup warm water. Mix with a spoon and knead into a soft dough. Apply a little oil on it. |

Make balls from the dough. Dip a ball into dry flour and roll the roti using a rolling pin. |

Heat a pan and place the rolled roti on it. Cook on medium to high heat. Flip when slightly cooked and press with a napkin to cook both sides. You can also cook it on direct flame. Once done, spread ghee on it. |

Coarsely crush 3 garlic cloves and some Kashmiri chilli powder together to make chutney. Keep aside. |

Take 1/2 raw mango, peel and grate it. Keep aside. In a bowl, take 1 cup besan. Gradually add 2 cups water while stirring to avoid lumps. Add 1/2 tsp haldi, salt to taste, and mix well. |

Heat 1/2 tbsp oil in a pan. Add 1 tsp rai, 1 tsp jeera, and a pinch of asafoetida powder. Add finely chopped green chillies, 1 finely chopped garlic clove, and 1 finely chopped onion. |

Add grated mango to the pan and cook on medium heat for 5-7 mins. Once the mango softens, add the besan mixture. Stir continuously until it thickens. Cover with a lid and cook on low flame for 5 mins. |

Add freshly chopped coriander and transfer to a serving plate. For tadka, heat 1/2 tbsp oil in a pan, add the prepared garlic chutney, fry well and pour over the pithla. Serve hot with jowar roti. |
