Ingredients

2 tbsp Oil
6 Cloves (Laung)
3 Cinnamon Sticks (Dalchini)
5-6 Bay Leaves (Tej Patta)
2+2 Dry Red Chillies
1.5 + 1 tsp Cumin Seeds (Jeera)
1.5 tsp White Sesame Seeds (Safed Til)
1 tbsp Raw Peanuts
1/2 tsp + 1 Pinch Asafoetida Powder (Hing)
1 tsp Turmeric Powder (Haldi)
Finely chopped vegetables (1/4 cup Carrot, 1 big Green Chilli (less spicy), French Beans, 1 medium sized Potato and 2 small sized Brinjal, cut into small cubes)
Some Green Peas
Salt as per taste
Red Chilli Powder (as per taste)
Soaked ingredients - 1/2 cup Rice, 1/4 cup Pigeon Pea Seeds (Tuvar Dal), 1/4 cup Yellow Lentils (Moong Dal)
3.5 cup Water
Kitchen King Masala/Garam Masala (as per taste)
1 medium sized Finely chopped Tomato
1 + 1 tsp Ghee
1/2 cup Curd (take sour curd)
Gram Flour (Besan)
1 tsp Mustard Seeds (Rai)
1/2 tsp Fenugreek Seeds (Methi Dana)
Few Curry Leaves
1 Green Chilli
1 small Ginger Knob
1 spoon Sugar (optional)
Handful of chopped Coriander

Khichdi kadhi is a simple and comforting North Indian dish made with rice and lentils (khichdi) and served with a yogurt-based curry (kadhi). 

Both khichdi and kadhi are easy on the digestive system and provide essential nutrients, making them an ideal meal for people of all ages.

Steps

Heat 2 tablespoons of oil in a pressure cooker.

Add 3 cloves, 2 cinnamon sticks, 2-3 bay leaves, 2 dry red chilies, 1.5 teaspoons of cumin seeds, 1.5 teaspoons of white sesame seeds, 1 tablespoon of raw peanuts, and a pinch of asafoetida powder.

Add 1 teaspoon of turmeric powder.

Add finely chopped vegetables, including carrots, green chilies, French beans, potatoes, and brinjal.

Add some green peas, salt, and red chili powder according to taste.

Include the soaked ingredients: 1/2 cup rice, 1/4 cup pigeon pea seeds (Tuvar Dal), and 1/4 cup yellow lentils (Moong Dal).

Mix everything well and add 1.5 cups of water.

Seal the pressure cooker and cook for up to 2 whistles.

Open the cooker and check the khichdi; it's partially cooked.

Add an additional 1/2 cup of water, Kitchen King Masala/Garam Masala, 1 medium-sized finely chopped tomato, and 1 teaspoon of ghee.

Mix everything well and seal the cooker again, cooking for 1 more whistle.

For Kadhi, in a bowl, take 1/2 cup sour curd.

Add 1 tablespoon of gram flour (besan), a little water, and salt to taste.

Mix with a hand blender and set aside.

Heat a deep base pan and add 1 teaspoon of ghee.

Add 1 cinnamon stick, 3 cloves, 1 teaspoon of cumin seeds, 1 teaspoon of mustard seeds, 1/2 teaspoon of fenugreek seeds, 2-3 bay leaves, 2 dry red chilies, a few curry leaves and add 1/2 teaspoon of asafoetida powder.

Crush 1 green chili and a small knob of ginger and add it.

Add 1.5 cups of water and stir continuously until it comes to a boil.
