Gluten-free Kuttu ka Dahi Bada is a vrat-special dish enjoyed during fasting periods like Navratri. It’s made using Kuttu (Buckwheat) flour, which is naturally gluten-free. The batter is seasoned with spices like cumin seeds, green chillies, and rock salt. After frying the bada (dumplings), they’re soaked in a creamy yogurt mixture flavored with spices. Finally, garnished with fresh coriander, it’s a delicious and satisfying dish for vrat meals.

In a mixing bowl, combine 1.5 cups of Kuttu atta and 3 tablespoons of Sabudana atta. Season with rock salt, grated ginger, chopped green chillies, and coriander. |

Gradually add water to make a thick batter, then beat with an electric beater for 5 minutes until fluffy. |

Heat oil in a pan for deep frying. Optionally, add 1/2 tsp baking soda to the batter. |

Spoon the batter into the hot oil and fry the vadas until golden brown on medium heat. Drain excess oil on tissue paper. |

Soak the fried vadas in water for 5 minutes to soften. |

For the chutney, blend peanuts, chopped ginger, green chilli, coriander, curd, water, and rock salt to a smooth paste. |

In a separate bowl, mix beaten curd with sugar and rock salt. |

To assemble, squeeze excess water from vadas and place them in a serving bowl. Pour curd over them, add chutney, and garnish with pomegranate seeds, roasted cumin powder, and coriander leaves. |
