Lauki Bharta is a flavorful Indian dish made from mashed bottle gourd (lauki), typically cooked with spices and aromatics. Take 1 Lauki and roast it directly over gas heat until completely charred and the skin starts releasing. Peel off the charred skin and chop the Lauki well using a knife. |

Heat 1 tablespoon of Oil in a pan. Add 1 teaspoon of Cumin Seeds and a pinch of Asafoetida Powder (Hing). |

Stir in 1 teaspoon of Ginger-Garlic paste and finely chopped Green Chillies to taste. |

Add 1 finely chopped Onion and cook until translucent. Mix in Salt to taste and 1 finely chopped Tomato, cooking until it's soft. |

Stir in 1 teaspoon of Coriander Powder, Red Chilli Powder to taste, and 1/2 teaspoon of Turmeric Powder. Optionally, add Garam Masala for extra flavor. |

Roast the spices well and then add the charred Lauki to the pan. |

Mix everything well, cover the lid, and cook for 10-15 minutes on medium heat. |

Sprinkle Kasuri Methi and chopped Coriander over the cooked Lauki Bharta. |
