Ingredients

1 cup For the Rice Balls: leftover cooked rice
1/2 cup chopped mixed vegetables (carrot, capsicum, and onion)
2 medium-sized boiled potatoes, mashed
A few green chilies, finely chopped
Small bunch of coriander, finely chopped
2 Tbsp cornflour
1/2 tsp chili flakes
Salt
Pizza cheese (cut into small cubes for stuffing)
Oil (for greasing palms and deep frying)
Breadcrumbs, for coating
1/4 cup For the Slurry: maida (plain flour)
A pinch of salt
Water, as required
For Serving: Mayonnaise and ketchup (mixed for the dip)

Instead of tossing out yesterday’s rice, transform it into these incredibly crisp and gooey cheeseballs. In a mixing bowl, combine the leftover cooked rice, chopped mixed vegetables (carrot, capsicum, onion), mashed potatoes, green chilies, coriander, cornflour, chili flakes, and salt. Mix everything together thoroughly until it forms a soft, cohesive dough.

Apply a little oil to your palms to prevent sticking. Take a small portion of the prepared rice mixture and flatten it in your hand. Place a small piece of pizza cheese right in the center. Carefully bring the edges of the mixture up to cover the cheese completely, rolling it between your palms to form a smooth, round ball. Repeat for the rest of the mixture.

In a small bowl, whisk together the maida, a pinch of salt, and enough water to create a thin, smooth slurry.
