Ingredients

1 chopped small Ginger Knob
3-4 Green Chilies
Green Garlic (alternatively spring onion can be used)
Coriander Leaves
200g Green Peas (Matar)
2 tsp + more Palm Oil
1 tsp Cumin Seeds (Jeera)
1 medium sized finely chopped Onion
Salt to taste
2 tsp Coriander Seeds Powder (Dhaniya Powder)
1/2 tsp Turmeric Powder (Haldi)
Raw Mango Powder (Amchur Powder)
Garam Masala (as per taste or alternatively Kitchen King Masala can be used)
2 spoon Gram Flour

Matar Ke Kabab are delicious, savory vegetarian patties made from mashed green peas (matar), spices, and herbs. The mixture is seasoned with ingredients like ginger, garlic, garam masala, and green chilies, then shaped into patties and shallow-fried until crispy. These kababs are a popular snack or appetizer, often served with chutneys or yogurt. They’re rich in protein and fiber, making them a healthy, flavorful option. Perfect for parties or as a light meal!

In a chopper, add 1 chopped small ginger knob, 3-4 green chilies, a handful of green garlic, and some fresh coriander leaves. Coarsely grind this mixture and transfer it to a bowl.

In the same bowl, add 200g of green peas (matar) and coarsely grind them. Transfer the ground peas to the bowl with the green masala mixture.

Heat 2 tsp of palm oil in a pan. Add 1 tsp of cumin seeds and let them splutter. Then, add 1 finely chopped onion and sauté until golden.

Add salt to taste, followed by the ground green masala, 2 tsp coriander powder, 1/2 tsp turmeric powder, 1 tsp raw mango powder (amchur), and garam masala to taste. Stir well and cook for a few minutes. Then, add 2 tbsp gram flour (besan) and mix everything thoroughly. Let the besan cook for 2-3 minutes.

Once the mixture is well-cooked and cool enough to handle, transfer it to a plate and let it cool completely. Shape the mixture into small tikki-shaped kebabs.

Heat palm oil in a pan and place the shaped kebabs in it. Cook until both sides are golden-brown and crispy.
