Steps

1
Done

In a blender jar, combine the coriander, mint leaves, garlic, green chillies, ginger, 1 boiled potato, tamarind pulp, lime juice, black salt, jaggery, regular salt, and 1/2 cup water. Blend everything until smooth to create the green chutney.

Tip - For Jain version, in chutney instead of potato, you may use gaathiya or peanuts or you can take 1.5 tbs bread crumbs - any thickening agent will work

2
Done

In a large mixing bowl, take the 2 mashed potatoes.

3
Done

Add the coarsely pounded coriander seeds, black salt, chaat masala, dhania powder, roasted cumin powder, and chili flakes. Mix the spices well with the potatoes.

4
Done

Stir in the boiled kala chana, chopped tomatoes, chopped onions, and fresh pomegranate seeds until evenly combined.

5
Done

Pour the prepared green chutney over the mixture, followed by 1 cup of chilled water. Mix everything thoroughly.

6
Done

Top with fresh coriander leaves and a generous handful of masala boondi.

Zero-Waste & Substitutes
* Zero-waste: Do not throw away your coriander stems; they hold massive flavor and should go right into the blender for the chutney. Keep your potato peels, toss them with a little oil and salt, and air-fry them for a crispy evening snack.

* Substitutes: If you are out of jaggery, you can use a couple of pitted soft dates to sweeten the chutney. You can also easily swap kala chana for boiled whole moong or white kabuli chana.
