Sabudana Strawberry Custard is a delightful fusion dessert that combines creamy custard, chewy sabudana, and fresh strawberries. The richness of chilled custard pairs perfectly with the light, jelly-like texture of sabudana, making it a refreshing treat. The addition of Roohafza enhances the flavor with a subtle rose essence, making it a perfect dessert for festive occasions or summer indulgence.

Benefits –

  1. Light and Refreshing – A chilled, soothing dessert perfect for hot days.
  2. Rich in Texture – The combination of creamy custard and soft sabudana makes every bite satisfying.
  3. Nutritious and Filling – Sabudana provides energy, while strawberries add antioxidants and vitamins.
  4. Festive Special – Ideal for fasting, celebrations, and summer gatherings.
  5. Customizable Sweetness – Can be adjusted with condensed milk as per taste preferences.

Steps

1
Done

Chop 200 gm strawberries and keep aside.

2
Done

Heat 1 ltr full fat milk in a pan.

3
Done

Into that add 2 tbs diluted custard powder ( to dilute custard powder, add in 1/4 cup cold milk into custard powder).

4
Done

Keep the heat low to medium, stir continuously until mixture becomes little thick.

5
Done

Turn off the heat and remove the custard into a bowl and leave it in the fridge for couple of hours.

6
Done

To cook sabudana, take 2 cups of water into a pan, bring it to boil, into that add 1/2 cup soaked sabudana (soaked for 2 hours).

7
Done

Let sabudana cook in the boiling water till it becomes transparent.

8
Done

Turn off the heat and strain sabudana. (Pro Tip : Wash sabudana under tab water so that it does not cook further). Let it cool down.

9
Done

Now in a mixing bowl, add cooked sabudana, 1/4 cup Roohafza (rose sharbat), chopped strawberries, chilled custard mixture, condensed milk as per your taste (I have added 3 tbs) and some chopped nuts.

10
Done

Mix everything well. Leave this custard in the fridge; and enjoy it chilled.
