Sabudana vada is a popular Indian snack made from soaked sabudana (tapioca pearls), potatoes, and spices. Traditionally, it’s deep-fried, but using an air fryer offers a healthier alternative with equally crispy results. Serve hot with yogurt or chutney for a delicious and nutritious snack. This method reduces oil usage while retaining the authentic flavors and texture of sabudana vada.

Wash and soak 1 cup of Sabudana for 4-5 hours. |

In a bowl, mix soaked Sabudana with boiled and mashed potatoes, crushed peanuts, chopped green chilies, chopped coriander, grated ginger (optional), cumin seeds, salt, and lemon juice. |

Shape the mixture into small tikki-shaped vadas. Coat them with the reserved soaked Sabudana. |

Brush a little oil on parchment paper in the air fryer. |

Place the vadas on the paper, brush oil on top, and air fry at 180⁰C for 20 minutes, flipping halfway through. |
