Ingredients

2 For the Mango Salsa - ripped Mangoes cubes
1 medium Onion finely chopped
2/3 Tomatoes finely chopped
2 Green Chillies finely chopped
1 bunch fresh coriander
Lime juice
salt
2 tbsp For the Mix Veg Rice - Oil
2/3 Garlic cloves finely chopped
1 tsp Chili flakes
1/4 cup Sweetcorn boiled
1 Zucchini small dice
1/2 cup Bell paper (green, yellow, red)
1 tsp mixed herbs
2 cups Pre boiled rice
For the Pineapple Paneer Mix - Oil or butter for cooking
Garlic finely chopped
green chilies finely chopped
1/2 tsp chili flakes
200g paneer
1/2 cup Cashews
1 large Onion
Red bell paper
1/2 Pineapple
Turmeric Powder
2 For the Mint Yogurt Sauce - Green chilies
1 cup Mint leaves
1 cup curd
salt
1/2 cup Fresh coriander

Putting your entire summer vacation on one single plate, this summer rice bowl is so good that you are going to send me a thank-you note for sure.

Steps

To Make Mango Salsa - Cut 2 ripe mangoes into cubes. Add 1 medium size onion (finely chopped), 2-3 tomatoes (finely chopped), 2 green chilies (finely chopped), and 1 big bunch of fresh coriander.

Squeeze some fresh lime juice on top. Mix everything well and keep aside.

Note: At the time of serving, add salt as per taste.

To Make Mix Veg Rice - In a pan, heat 2 tbsp oil.

Once hot, add 2-3 finely chopped garlic cloves, 1 tsp chili flakes, 1/4th cup boiled sweetcorn, 1 big zucchini (cut into small dice), and 1/2 cup mixed bell peppers (green, yellow, red, finely chopped).

Sprinkle some salt as per taste and 1 tsp mixed herbs.

Cook the veggies just for 5 minutes, then add 2 cups of pre-boiled rice.

Mix well and keep aside.

To Make Pineapple Paneer Mix - In a pan, heat some oil or butter.

Once hot, add finely chopped garlic, 1/2 tsp chili flakes, and a few fresh green chilies (finely chopped).

Add 200g paneer (cut into cubes) and 1/4 cup cashew nuts.

Toss everything well and let it cook until you get a golden color on the paneer and cashew nuts.

Add 1 big size onion (cut into cubes), some red bell pepper (cut into cubes), and half a pineapple (cut into cubes).

Finally, add salt and a pinch of turmeric powder.

Mix everything well and keep it aside.

To Make Mint Yogurt Sauce - In a blender jar, combine 2 green chilies, 1 cup fresh mint leaves, 1/2 cup fresh coriander, 1 cup curd, and salt to taste. Blend until smooth.

To Serve This Delicious Bowl - In a serving bowl, lay down some fresh salad leaves.

Serve the mixed veg rice on one side of the bowl.

Place the pineapple paneer mix on another side, and the mango salsa next to it.
