To Make Mango Salsa - Cut 2 ripe mangoes into cubes. Add 1 medium size onion (finely chopped), 2-3 tomatoes (finely chopped), 2 green chilies (finely chopped), and 1 big bunch of fresh coriander. |

Squeeze some fresh lime juice on top. Mix everything well and keep aside. |

Note: At the time of serving, add salt as per taste. |

To Make Mix Veg Rice - In a pan, heat 2 tbsp oil. |

Once hot, add 2-3 finely chopped garlic cloves, 1 tsp chili flakes, 1/4th cup boiled sweetcorn, 1 big zucchini (cut into small dice), and 1/2 cup mixed bell peppers (green, yellow, red, finely chopped). |

Sprinkle some salt as per taste and 1 tsp mixed herbs. |

Cook the veggies just for 5 minutes, then add 2 cups of pre-boiled rice. |

Mix well and keep aside. |

To Make Pineapple Paneer Mix - In a pan, heat some oil or butter. |

Once hot, add finely chopped garlic, 1/2 tsp chili flakes, and a few fresh green chilies (finely chopped). |

Add 200g paneer (cut into cubes) and 1/4 cup cashew nuts. |

Toss everything well and let it cook until you get a golden color on the paneer and cashew nuts. |

Add 1 big size onion (cut into cubes), some red bell pepper (cut into cubes), and half a pineapple (cut into cubes). |

Finally, add salt and a pinch of turmeric powder. |

Mix everything well and keep it aside. |

To Make Mint Yogurt Sauce - In a blender jar, combine 2 green chilies, 1 cup fresh mint leaves, 1/2 cup fresh coriander, 1 cup curd, and salt to taste. Blend until smooth. |

To Serve This Delicious Bowl - In a serving bowl, lay down some fresh salad leaves. |

Serve the mixed veg rice on one side of the bowl. |
