1 cup almonds
1 cup pistachios
A few cardamom pods
A pinch of black pepper
1 tbsp fennel seeds (saunf)
1 tbsp poppy seeds (khas khas)
1 tbsp melon seeds
3/4 cup oats
7-8 soaked dates
Saffron (kesar)
White cooking chocolate
Food coloring (optional)
Dry rose petals (for garnishing)

Thandai Ladoo is a delightful fusion of traditional Indian flavors with a modern twist. Dry roast almonds, pistachios, cardamom, black pepper, fennel seeds, poppy seeds, and melon seeds in a pan. Set aside.

In the same pan, dry roast oats and set aside. Coarsely grind all the roasted nuts and seeds in a mixer to make Thandai Masala.

Add roasted oats and grind again. Add soaked dates and saffron soaked in warm milk. Grind again to make Thandai Laddoo mixture.

Shape the mixture into laddoos. Melt white cooking chocolate and let it cool slightly.

Coat the Thandai Laddoos with melted chocolate and let them set on butter paper in the fridge for 5 minutes.

Melt more white cooking chocolate and add food coloring as desired.

Decorate the Chocolate Coated Laddoos with different colored chocolate using piping bags.
