Dry roast almonds, pistachios, cardamom, black pepper, fennel seeds, poppy seeds, and melon seeds in a pan. Set aside. |

In the same pan, dry roast oats and set aside. Coarsely grind all the roasted nuts and seeds in a mixer to make Thandai Masala. |

Add roasted oats and grind again. Add soaked dates and saffron soaked in warm milk. Grind again to make Thandai Laddoo mixture. |

Shape the mixture into laddoos. Melt white cooking chocolate and let it cool slightly. |

Coat the Thandai Laddoos with melted chocolate and let them set on butter paper in the fridge for 5 minutes. |
