Vadi nu Shak is a traditional Gujarati dish made with steamed and fried vadi (dumplings), which are typically made from a blend of moong dal, spices, and herbs. The vadi is cooked into a dough, shaped into small pieces, steamed, and then fried or added directly to a spicy, tangy curry. The curry is made using ingredients like tomatoes, yogurt, cumin, turmeric, and asafoetida, creating a flavorful gravy. The vadi soaks up the rich flavors of the curry, resulting in a comforting, hearty dish. It’s commonly served with roti or rice and is a beloved comfort food in Gujarati cuisine.

Take 1 cup of soaked moong dal in a mixer jar. Add 1 small ginger knob and green chilies (adjust to taste). Blend everything into a smooth batter and transfer it into a mixing bowl. Add salt to taste (optional: add haldi and lasun at this point). Beat the batter for 5-7 minutes to aerate and make it light and fluffy. |

Grease a plate or steaming tray and place small portions of the batter on it. Place the plate in a preheated steamer and steam for 10 minutes. After steaming, transfer the vadis onto a plate and set them aside. |

Heat 1 tbsp oil in a pan. Add 1 tsp jeera (cumin seeds) and a pinch of asafoetida. Add 2-3 finely chopped garlic cloves and 1 finely chopped medium-sized onion. Add salt to taste and cook until the onion turns light golden-brown. |

Add 1 tsp mirchi powder (chili powder), 1/2 tsp haldi powder (turmeric), and 1 tsp dhania powder (coriander powder). |

Add 4 medium-sized tomato puree and cover with a lid. Let it cook on medium heat for a few minutes. |

Add 1/2 cup fresh green peas and 1 cup water. Bring it to a boil. Once boiling, add the steamed vadis into the curry. |
