1/4 cup Australian almonds (soaked in warm water for 2-3 hours)
10-12 additional almonds (sliced for garnish)
1 L full-fat milk
3 tbsp condensed milk
1-2 tbsp gulkand (rose petal jam)
1/2 cup corn flour (cornstarch)
1.5 cups room-temperature water
Vanilla or rose ice cream (optional)
Dried rose petals
Spiced almonds (optional)
Chopped betel leaves (optional)
Soaked basil seeds (optional)

Almond Gulkand Falooda is a refreshing and indulgent dessert, combining the richness of almonds with the floral sweetness of gulkand (rose petal jam). The dish is made by layering falooda sev (sweet vermicelli) with milk, rose syrup, and gulkand. Chopped almonds add a crunchy texture, while rose petals or fresh fruits can be used for extra flavor and decoration. It’s a popular summer treat in Indian cuisine, offering a perfect balance of sweetness, creaminess, and floral notes. Serve chilled, it’s a cooling dessert, ideal for hot weather or special occasions.

Soak 1/4 cup of Australian almonds in warm water for 2-3 hours. After soaking, grind the almonds into a smooth paste. Slice 10-12 additional almonds thinly for garnish.

In a saucepan, heat 1 liter of milk until it starts boiling. Add the ground almond paste and 3 tbsp condensed milk to the boiling milk. Simmer on medium flame for about 15 minutes, stirring regularly until the mixture thickens.

Add the sliced almonds into the thickened milk and let it cool to room temperature. Once cooled, mix in 1-2 tbsp gulkand and refrigerate the mixture.

In a bowl, combine 1/2 cup corn flour with 1.5 cups of room-temperature water. Stir the mixture until it's smooth and lump-free. Cook over low-medium heat for about 10 minutes until the mixture thickens and turns transparent.

Let it cool slightly, then extrude the mixture through a sev maker into iced water to form the falooda sev strands.

In serving glasses, first layer with gulkand and soaked basil seeds (optional). Add the falooda sev and pour in the prepared almond milk mixture over it.

Top off with a scoop of vanilla or rose ice cream. Garnish with dried rose petals, spiced almonds, and chopped betel leaves (optional). Serve chilled for the ultimate indulgence!
