Avocado Paneer Toasty is a nutritious and delicious sandwich combining creamy avocado and paneer (Indian cottage cheese). The sandwich is prepared by spreading mashed avocado mixed with spices on slices of bread, topped with paneer, and then grilled until crispy. Mash 2 ripe avocados in a bowl. Squeeze in the juice of 1 lime to prevent oxidation. Add finely chopped green chilies, tomatoes, onions, coriander, and salt. Mix well. |

Heat some oil in a pan. Add 1/2 tsp turmeric powder, 1 tsp Kashmiri chili powder, 1/2 tsp garam masala (or tikka masala), kasoori methi, and salt. Fry the spices in oil on low flame for a minute. |

Add a few spoons of water and 150 gm grated paneer. Mix well and cook until the paneer is heated through and flavors are combined. |
