Ingredients

2 ripe avocados
1 lime
Finely chopped green chilies (to taste)
Finely chopped tomatoes (seeds removed)
Finely chopped onions
Chopped coriander
Salt (to taste)
Oil (for cooking)
1/2 tsp turmeric powder
1 tsp Kashmiri chili powder
1/2 tsp garam masala or tikka masala
Some kasoori methi (dried fenugreek leaves)
150gm grated paneer
Bread slices (sourdough or your choice)
Fresh coriander (for garnish)
Additional tomatoes (for garnish)

Avocado Paneer Toasty is a nutritious and delicious sandwich combining creamy avocado and paneer (Indian cottage cheese). The sandwich is prepared by spreading mashed avocado mixed with spices on slices of bread, topped with paneer, and then grilled until crispy. It’s often seasoned with salt, pepper, and herbs for extra flavor. This toasty is a perfect blend of creamy, cheesy, and crunchy textures, making it ideal for a quick meal or snack. Enjoy it warm with a side of salad or chutney.

Mash 2 ripe avocados in a bowl. Squeeze in the juice of 1 lime to prevent oxidation. Add finely chopped green chilies, tomatoes, onions, coriander, and salt. Mix well.

Heat some oil in a pan. Add 1/2 tsp turmeric powder, 1 tsp Kashmiri chili powder, 1/2 tsp garam masala (or tikka masala), kasoori methi, and salt. Fry the spices in oil on low flame for a minute.

Add a few spoons of water and 150 gm grated paneer. Mix well and cook until the paneer is heated through and flavors are combined.

Toast your choice of bread slices (sourdough or preferred type). Generously spread the avocado mixture on each toasted slice. Top with the paneer mixture.
