1 tsp Roasted Coriander Seeds (Bhuna Dhaniya)

Red Chilli Powder (as per taste)

2 tbsp Oil + Oil for shallow fry

About
Gatte ki Sabzi is a traditional Rajasthani dish from India. It is a curry made with gram flour (besan) dumplings called “gatte,” which are cooked in a spiced yogurt-based gravy. It is typically served with Indian flatbreads like roti or steamed rice.

Mix Gram Flour, Crushed Cumin Seeds, Roasted Crushed Coriander Seeds, Crushed Kasuri Methi, a pinch of Asafoetida, Red Chilli Powder, Turmeric Powder, Ajwain, Baking Soda (optional), Salt, and Oil/Ghee. Knead it into a dough using water. |

Roll the dough into balls and then shape them into cylindrical rolls like sausages. Cook these rolls in boiling water for 15-20 minutes until done. Remove and cut them into small pieces. |

Shallow fry the Gatte pieces in a pan until they turn golden brown. |

Heat oil in a pan. Add Cumin Seeds, a pinch of Asafoetida, Dry Red Chilli, Curry Leaves, Chopped Garlic, Chopped Ginger, and Chopped Onion. Cook and add Salt. Pour in Tomato Puree and cook for 10 minutes with the lid on. |

Mash some Gatte pieces and mix them into Curd. Add Turmeric Powder, Red Chilli Powder, and Coriander-Cumin Powder to this mixture. |

Add the Gatte-Curd mixture into the cooked gravy. Pour in the saved water from boiling Gatte. Cook for 5 minutes. |

Add the fried Gatte into the gravy, mix, and turn off the heat. Crush Kasuri Methi between palms and add it. Serve warm with Roti. |
