1 tbsp + 1 spoon Ghee

5-6 + 2 finely chopped + sliced Garlic Cloves

Palak Khichdi is a nutritious one-pot meal made from a combination of rice, lentils, and spinach. In a pressure cooker, add soaked Rice and soaked Yellow Lentils. Add 1.5 cups of Water and Salt as per taste. Pressure cook up to 2 whistles on medium heat. |

Submerge a bunch of Spinach in hot water for 5 seconds. Transfer it to a bowl of Ice Water to cool down. Place blanched Spinach in a mixer jar. |

Add 4 Green Chillies and Lemon Juice. Blend to create a thick paste. |

Heat 1 tsp Oil and 1 tbsp Ghee in a pan. Add 1 tsp Cumin Seeds, 2 Dry Red Chillies, and 1/2 tsp Asafoetida Powder. Add 5-6 finely chopped Garlic Cloves and brown them. |

Stir in 1 medium-sized finely chopped Onion, Salt to taste, Garam Masala, Turmeric Powder, and Coriander-Cumin Seeds Powder. If using, add finely chopped Carrot & French Beans. Cover and cook the vegetables for a while. |

Add the cooked Rice and Lentils to the pan with the vegetable mix. Pour in the Palak Puree and mix everything well. Cook for 5-7 minutes on medium heat. |

Heat 1 spoon of Ghee in a separate pan. Add 2 sliced Garlic Cloves and 1 Dry Red Chilli. Turn off the heat when the garlic turns golden-brown. |

Serve the Palak Khichdi warm in a bowl and pour the prepared tadka over it. |
