200 gm Okra (Bhindi - rinse with water, place it on kitchen towl for 2 hours and then chop)

Bhindi ki Kadhi is a popular North Indian dish made with okra (bhindi) and a yogurt-based kadhi. It’s a flavorful, tangy dish that combines the earthy taste of bhindi with the sourness of yogurt and the blend of spices. Crush 2 Green Chillies and a small piece of Ginger. In a mixing bowl, take 1/2 cup Curd (Dahi) and add 2 tablespoons of Gram Flour (Besan). Mix everything well to avoid lumps, then add 1 cup of water and mix thoroughly. |

Heat 1 tablespoon of Oil in a pan. Add 1 teaspoon of Fenugreek Seeds (Methi), 1 teaspoon of Cumin Seeds (Jeera), and 1 teaspoon of Mustard Seeds (Rai). |

Add a pinch of Asafoetida Powder (Hing), 3 finely chopped Garlic Cloves (optional), crushed Ginger & Chillies, and a few Curry Leaves. |

Add 200g Okra (Bhindi) and salt as per taste. Cook on medium to high heat without covering the pan to remove the stickiness of the bhindi. |

Further add 1 teaspoon of Coriander & Cumin Seeds Powder (Dhaniya-Jeera), Red Chilli Powder (as per taste), and 1/2 teaspoon of Turmeric Powder (Haldi). |

Add the besan mixture and 1 cup of water by stirring continuously. Season with salt as per taste. |
