4-5, soaked in water Dry Kashmiri Red Chillies

Roti, Paratha, or TortillasFor the quesadillas

CheeseMozzarella or your preferred melting cheese

Fresh CorianderFor garnish

1 tablespoon Fats: Oil

1.5 tablespoons Butterfor the bhaji, plus more for cooking the quesadillas

2 teaspoons Spices and Seasonings: Kashmiri Red Mirchi Powderplus more if needed for the bhaji

This recipe is a busy mom’s dream—it’s quick, easy, and can be served for lunch, dinner, or as a fun snack. The secret? A thick, flavorful pav bhaji that’s perfect for stuffing. The best part is you can use anything from tortillas to leftover rotis or parathas. Just add a sprinkle of cheese, and watch it become an instant family favorite and get kids excited for school tiffin as well.

To make basic preparationsIn a pressure cooker, take 500 gm mix vegetables. (I have taken cauliflower, eggplant, potatoes, green peas). |

Then add some salt, 2 tsp Kashmiri Red Mirchi Powder (I have used Bhoj Masale) and 1 tsp Pav Bhaji Masale (Bhoj Masale). |

Then add just 2 tbs water and cook on a medium flame upto 3 whistles. Once the cooker gets cool down, mash the veggies and keep aside. |

To make Lahsoon ChutneyTake 4-5 cloves garlic, 1 tsp cumin seeds, 4-5 dry Kashmiri Red Chillies soaked in water, salt. |

Pound everything together. |

To make Bhaji for stuffingIn a pan, take 1 tbs oil, and 1.5 tbs butter. |

Into that fry, prepared Lasoon chutney first. |

Then add finely chopped 2 medium size onion, and fry everything together till onion becomes golden in color. |

Then add finely chopped 1 capsicum and some masalas (Haldi Powder, Chili powder if required and Dhania Powder). |

Then add 1 tsp Bhoj Pav Bhaji Masala. Mix everything well. |

Once you see Masala gets cooked add, tomato puree (4 medium size tomato puree) |

Now cook till tomato puree gets cooked and then boiled and mashed vegetables. |

Mix everything and let bhaji cook till it becomes semi dry. |

At last sprinkle some fresh coriander. |

To make QuesadillasApply some butter on a tawa. |

On that place, roti or parathas or tortillas. |

Then on one side or tortillas spread some bhaji, sprinkle some cheese (I have used Mozzarella cheese), finely chopped onion and fresh coriander on the top. |
