Ingredients

1 cup Fortune Soya Chunks
For boiling Water
As needed for boiling water Salt
1 cup Grinded Soya Chunks
1 tbsp Oil
1 tsp Jeera (Cumin)
2 medium size Onions finely chopped
2 tsp Ginger-Garlic Paste
1 tsp Turmeric
2 tsp Red Chili powder
1.5 tsp Coriander powder
1 tsp Garam Masala
1/4 cup Green Peas raw and crushed
2-3 tbsp Fresh Coriander finely chopped
Salt to taste
Water A splash (to prevent spices from burning)
Atta (Whole Wheat Dough) As required
White Sesame Seeds (Til) for topping
Fresh Coriander for topping
Ghee or Oil For roasting

Preparing Soya Chunks Base - - Cook 1 cup Fortune Soya Chunks (soya badi) in salted boiling water for 5 minutes.

Drain out all water from soya chunks and let it cool down.

Squeeze the excess water and grind them fine.

Making Soya Stuffing - Heat up a pan, add 1 tbs oil, 1 tsp jeera. - Once Jeera crackles, add 2 medium size finely chopped onion and salt.

Saute onion well, it turns golden in color, then add 2 tsp ginger garlic paste and fry it as well.

Then add 1 tsp turmeric powder, 2 tsp chili powder, 1.5 tsp coriander powder, 1 tsp garam masala and on slow flame fry all the masala till you get nice aroma.

Then sprinkle some water so masalas don’t get burnt.

After that add, minced soya badi and mix everything well.

At last, add some raw crushed green peas and fresh coriander.

- Just cook for 2 minutes and turn off the heat. And let it come to room temperature.

Making Soya Paratha - Take big portion of atta, roll it half way. Stuff soya mixture, seal it tightly, press the peda flat, sprinkle some white sesame seeds and coriander on top of peda.

Now roll the paratha, thickness should be exactly like aloo paratha.

Cook paratha on hot tawa with help of Ghee or oil, till you get golden color on each side. (Flame should be medium)
