Today, we are making a complete, nutrient-rich Middle Eastern Bowl in just 15 minutes! Yes, you heard that right. We are making perfectly steamed spiced rice, crispy chickpea falafel, and roasted vegetables all at the exact same time using the Ninja Combi’s incredible Simultaneous Cooking feature. Its Hyper Steam and Air Fry technology ensures the rice is fluffy, the veggies are perfectly roasted, and the falafel is juicy on the inside and perfectly crispy on the outside. All while I easily make a fresh tahini sauce on the side. No more constant monitoring, no more heating up the kitchen, and no more soggy or dry food. Prep for the Falafel - In a chopper or blender, add the overnight soaked (raw) chickpeas, garlic cloves, green chilies, and fresh coriander. |

Add the roasted and crushed coriander & cumin seeds, white sesame seeds, besan, salt, and 1 tbsp of water. |

Blend into a coarse mixture. Transfer to a bowl and shape into small, round falafel patties. |

Prep the Rice - In the bottom pan of the Ninja Combi, add the soaked basmati rice, water, saffron water, cinnamon stick, Kashmiri chili powder, and salt. |

Marinate the Veggies - In a large bowl, combine the bell peppers, baby corn, onions, and mushrooms. |

Add finely chopped garlic, olive oil, chili flakes, za'atar, Kashmiri chili powder, and salt. |

Mix well to coat the vegetables. |

Load the Ninja Combination - Place the Crisper Plate on the top level. Arrange the marinated vegetables on one side of the plate and the shaped falafel on the other side. Brush the falafel lightly with a little oil. |

Cooking Instructions (Simultaneous Cooking) - Place the bottom pan (with rice) and the crisper plate (with falafel and veggies) into the Ninja Combi. Flip the Smart Switch to Combi Meals. Set the timer for 15 minutes and press Start. |

Make the Sauce - While the meal cooks, whisk the yogurt in a bowl. Add tahini paste, lemon juice, chopped dill, finely chopped garlic, and salt. Mix until smooth and creamy. |

Assemble the Bowl - Once the Combination finishes cooking, scoop the fluffy saffron rice into a serving bowl. Top with the grilled vegetables and crispy falafel. |
