Wash the small fresh bitter gourds thoroughly and dry them completely. |

Cut the bitter gourds from the center and scoop out all the seeds. |

Thinly chop all the bitter gourds. |

Transfer the chopped karela to a bowl, add salt, and leave it aside for 15 minutes so the karela oozes out excess water. |

Squeeze the bitter gourd tightly to extract the excess water and place the squeezed pieces into another clean bowl. |

To the squeezed karela, add 2 tsp oil, coriander powder, chili powder, turmeric powder, asafoetida, dry mango powder, sugar, and additional salt if required. Mix everything well. |

Add the gram flour (besan) to the bowl and mix again thoroughly. The mixture should remain dry (do not add water) to ensure the karela turns out crispy. |
