1/4 Cup Freshly grated Coconut

Akki rotti is a traditional and popular South Indian flatbread made from rice flour. It originated in Karnataka, a state in southern India, and is a staple dish in Kannadiga cuisine. This gluten-free dish is typically enjoyed for breakfast or as a snack but can be served at any time of the day.
Akki rotti is often served hot with various accompaniments such as chutney, coconut chutney, sambar, or a dollop of ghee.

In a mixing bowl, combine the rice flour, finely chopped onion, coriander, ginger, green chilies, curry leaves, cumin seeds, grated coconut, and salt. Mix everything well together.

Gradually add a little water to the mixture and knead it into a soft dough. If the dough sticks to your hands, apply some oil to prevent sticking.

Take a dough ball and place it on a plastic bag or parchment paper. Flatten it with your hands to form a round disc, about 1/4 inch thick.

Heat a pan or skillet over medium heat. Brush some oil on the heated pan.

Carefully transfer the flattened dough onto the hot pan.

Drizzle some oil around the edges of the roti and cook it on medium heat until the bottom side turns golden-brown.
