About
Baba ganoush is a traditional Middle Eastern dish made from roasted eggplant, tahini, olive oil, lemon juice, garlic, and various seasonings. It’s often served as an appetizer or side dish, accompanied by pita bread or vegetables for dipping. Oil It’s also rich in vitamins, minerals, and antioxidants, offering both delicious taste and nutritional benefits.

Roast 1 eggplant on an open flame until charred, then cover and let sit for 10 min. |

Heat oil in a pan, add ½ tsp each of red chili powder, coriander powder, roasted cumin seeds, and a pinch of turmeric. |

Add boiled chole (chickpeas), salt to taste, and roast until coated. |

Peel off eggplant skin, chop finely with garlic, then transfer to a mixing bowl. |

Mix in 2 tbsp tahini paste, 2 tbsp hung curd, ½ lemon juice, salt, and optionally green chilies. |
