Ingredients

1 L Milk (full fat milk) To make Paneer
2 Tbsp Vinegar diluted with 2 tbs Water
1 L Milk in a pan (full fat milk) To make Kheer
4-5 Cardamom Powder
3 Tbsp Jaggery Powder (alternatively condensed milk can be used)
Almond & Pistachio for garnish

Chena payas is a traditional Indian dessert originating from the state of West Bengal. It is made by simmering chena (fresh cheese curds) or paneer in sweetened milk flavored with cardamom. The chena is typically shaped into small balls before cooking. Once cooked, it’s chilled and garnished with nuts like almonds or pistachios. Chena payas has a creamy texture and a delicate sweetness,

making it a popular treat during festivals and celebrations.

Heat 1 liter of full-fat milk in a pan until it starts to simmer.

Dilute 2 tablespoons of vinegar with 2 tablespoons of water. Mix well.

Add the diluted vinegar mixture to the milk, stirring gently until the milk curdles.

Place a muslin cloth in a sieve and pour the curdled milk into it. Rinse with a glass of water to clean it.

Hang the muslin cloth with the curdled milk to drain excess water and form paneer. Set it aside.

Now, for the kheer, heat another 1 liter of full-fat milk in a separate pan until it reduces to half its original volume.

Add 4-5 cardamom pods, powdered, to the milk.

Gently mash the prepared paneer and add it to the milk, stirring with a spatula.

Put 3 tablespoons of jaggery powder into the mixture, giving it a good mix.

Once everything is well combined, turn off the heat.
