Cucumber suji dosa is a savory Indian pancake made from semolina (suji) and fresh cucumber. Soak 1 cup of suji in 3/4 cup water for 30-60 min.

In a blender, add soaked suji, 3 medium-sized cucumbers (cubed), 2 tbsp grated coconut, chopped ginger (optional), 1 tsp cumin seeds, 1 tsp coriander seeds, a pinch of turmeric powder, and 2-3 dry red chilies with 2 tbsp water. Blend to a smooth batter.

Transfer the batter to a mixing bowl, adjust consistency with water if too thick, then add salt and chopped coriander (optional).

Heat a pan, grease lightly with oil, pour batter, spread it, and cook covered on medium heat.

Drizzle oil around the dosa, flip when golden-brown, cook the other side, and serve hot. Repeat for more dosas. Enjoy with green chutney.
