Ingredients

2 raw sweetcorn
2 cloves garlic finely chopped
2 / 3 green chillies chopped
1 onion chopped
Chopped coriander
1tsp turmeric powder
1tsp chilli powder
1tsp cummin seeds
2 tbsp Besan
2 tbsp Rice flour
Salt as per taste
Oil or butter
2 Tomatos
mint leaves

Remove the kernels from the 2 raw sweetcorn.

In a blender jar, add half of the sweetcorn kernels and coarsely grind them.

In a mixing bowl, combine the ground sweetcorn mixture with the remaining whole sweetcorn kernels.

Add the finely chopped garlic cloves, chopped green chillies, finely chopped onion, and chopped coriander to the bowl.

Add the turmeric powder, chilli powder, cumin seeds, besan, rice flour (or oats/suji), and salt.

Mix everything well without adding water initially. If the mixture feels too dry, add 1-2 teaspoons of water to help bind it.

Heat an appe pan over low to medium flame and lightly grease the molds with oil or butter.

Spoon the sweetcorn batter into each mould. .

Cover the pan and cook for a few minutes until the bottom side turns golden brown.

Flip the appe and cook the other side until golden brown and cooked through.

For the Spicy Coriander Chutney: In a mixer jar, combine the garlic cloves, green chillies, tomatoes, coriander, optional mint leaves, and salt. Grind everything well until you get a smooth chutney. Add a little water if needed to adjust the consistency.
