Remove the kernels from the 2 raw sweetcorn. |

In a blender jar, add half of the sweetcorn kernels and coarsely grind them. |

In a mixing bowl, combine the ground sweetcorn mixture with the remaining whole sweetcorn kernels. |

Add the finely chopped garlic cloves, chopped green chillies, finely chopped onion, and chopped coriander to the bowl. |

Add the turmeric powder, chilli powder, cumin seeds, besan, rice flour (or oats/suji), and salt. |

Mix everything well without adding water initially. If the mixture feels too dry, add 1-2 teaspoons of water to help bind it. |

Heat an appe pan over low to medium flame and lightly grease the molds with oil or butter. |

Spoon the sweetcorn batter into each mould. . |

Cover the pan and cook for a few minutes until the bottom side turns golden brown. |

Flip the appe and cook the other side until golden brown and cooked through. |

For the Spicy Coriander Chutney: In a mixer jar, combine the garlic cloves, green chillies, tomatoes, coriander, optional mint leaves, and salt. Grind everything well until you get a smooth chutney. Add a little water if needed to adjust the consistency. |
