2 tbsp Kasuri Methi (optional or alternatively fresh Methi can be used)

1/2 cup Pearl Millet Flour (Bajre ka atta)

1/4 cup Gram Flour (Besan for binding)

Palak bajra chilla is a nutritious Indian pancake or crepe made with spinach (palak) and pearl millet (bajra) as primary ingredients. The recipe involves making a batter by blending spinach leaves with bajra (millet) flour and other ingredients, then cooking it like a pancake.

In a mixing bowl, combine the chopped spinach, onion, carrot, ginger, green chilies, cumin seeds, sesame seeds, dry spices (like turmeric, coriander, red chili powder), salt, and kasuri methi. Mix them well. |

Add pearl millet flour (bajra atta) and gram flour gradually to the vegetable mixture. Mix thoroughly. |

Gradually add water to attain a thick batter consistency. Ensure it's well-mixed to avoid lumps. |

Heat a non-stick pan and lightly grease it with oil using a paper towel. |

Drizzle a little oil on top of the chilla. |
