Sprouted moong appe, also known as sprouted mung bean paniyaram or sprouted green gram appe, is a healthy and delicious South Indian dish. It’s made by fermenting a batter of sprouted green gram (moong), rice, and various spices in a special appe pan.
Sprouted moong beans are an excellent source of plant-based protein. This makes sprouted moong appe a nutritious option, especially for vegetarians and vegans.

In a mixer jar, combine 1 cup of moong sprouts, 1/2 cup of soaked poha (flattened rice), a small chopped ginger knob, green chilies (as per taste), and salt (as per taste). |

Add a little water and grind the mixture to form a thick batter with a dosa-like consistency. |

Transfer the batter to a mixing bowl and add 1 tsp of cumin seeds (jeera), finely chopped onion, carrot, and coriander. |

Mix everything well and add 1 tsp of fruit salt (Eno). Ensure it's mixed thoroughly. |

Heat an appe pan and add a very small amount of oil to each of the cavities. |

Pour the batter into each cavity. |

Cover the pan with a lid and allow the appe to cook. |

Flip the appe and cook until they turn golden-brown and are cooked thoroughly on both sides. |
