Sudka, besan doodh, is a traditional Indian beverage made by mixing gram flour (besan) with milk and spices. To prepare it, heat milk in a pan and gradually add besan while stirring continuously to avoid lumps. Then, add sugar or jaggery for sweetness, along with flavorings such as cardamom powder or saffron. The mixture is simmered until it thickens to a desired consistency. Besan doodh is rich in protein and nutrients from gram flour and milk, making it a nutritious and comforting drink, especially during cold weather or as a post-meal treat.

In a pan, heat 1 teaspoon of ghee over low flame. Add black pepper and 2 teaspoons of besan to the pan. |

Then, add 1/2 teaspoon of haldi and 1/2 teaspoon of dry ginger powder. Mix everything well. |

Add dry fruits of choice to the mixture. |

Pour in 2 cups of milk and add some saffron if desired. |

Bring the mixture to 2-3 boils. |

Turn off the heat and add 1.5 tablespoons of jaggery powder (adjust according to taste). Stir until the jaggery is dissolved. |
