Ingredients

2 Corn Cob (remove corn) For Dhokla-
Chopped Green Chilli & Ginger
1 cup fine Semolina (Suji / Rava)
2 tbsp Gram Flour (Besan)
1/2 cup sour Curd (Khatta Dahi)
Pinch of Turmeric Powder (Haldi)
Salt as per taste
1 tsp Fruit Salt (Eno)
Red Chilli Powder
Bhavnagari Gathiya (alternatively sev or peanuts can be used) For Chutney-
2-3 Green Chillies
1 big bunch of Coriander (cleaned)
1/2 Lemon Juice
Few Ice Cubes
Salt as per taste
1 tbsp Oil For Tadka-
1 tsp Mustard Seeds (Rai)
1 tsp White Sesame Seeds (Safed Til)
Pinch of Asafoetida Powder (Hing)
Chopped Coriander

Sweet Corn Dhokla is a steamed savory cake made from a blend of sweet corn, gram flour, and spices. It’s light, fluffy, and typically garnished with mustard seeds and green chilies for added flavor. Coriander Chutney, a vibrant green condiment, is made from fresh coriander leaves, green chilies, and lemon juice, offering a refreshing taste. Together, they create a delicious combination of flavors and textures. This dish is popular as a snack or appetizer in Indian cuisine.

In a mixer jar, add the corn kernels, chopped green chilli, and ginger. Coarsely crush the mixture without adding water.

Transfer the mixture to a mixing bowl. Add fine suji, besan, and khatta dahi. Mix well and let the batter rest for 15-20 minutes.

In a mixer jar, combine Bhavnagari gathiya, green chillies, cleaned coriander, lemon juice, and ice cubes. Churn to a smooth consistency. Add salt to taste and set aside.

After resting, add a pinch of haldi and salt to the batter. Mix well. Heat a steamer and grease a plate. Add 1 tsp fruit salt (Eno) to the batter and mix quickly. Pour the batter onto the greased plate and sprinkle red chilli powder on top.

Place the plate in the preheated steamer. Cover with a lid and steam for 20 minutes on high heat.

In a pan, heat 1 tbsp oil. Add mustard seeds and a pinch of hing. Once the mustard seeds crackle, add safed til. Pour the tadka over the steamed dhokla.

Garnish the dhokla with chopped coriander leaves and cut into squares. Enjoy the scrumptious sweet corn dhokla with the fresh green chutney!
