About
Sweet Corn Dhokla is a steamed savory cake made from a blend of sweet corn, gram flour, and spices. It’s light, fluffy, and typically garnished with mustard seeds and green chilies for added flavor. Coriander Chutney, a vibrant green condiment, is made from fresh coriander leaves, green chilies, and lemon juice, offering a refreshing taste. In a mixer jar, add the corn kernels, chopped green chilli, and ginger. Coarsely crush the mixture without adding water. |

Transfer the mixture to a mixing bowl. Add fine suji, besan, and khatta dahi. Mix well and let the batter rest for 15-20 minutes. |

In a mixer jar, combine Bhavnagari gathiya, green chillies, cleaned coriander, lemon juice, and ice cubes. Churn to a smooth consistency. Add salt to taste and set aside. |

After resting, add a pinch of haldi and salt to the batter. Mix well. Heat a steamer and grease a plate. Add 1 tsp fruit salt (Eno) to the batter and mix quickly. Pour the batter onto the greased plate and sprinkle red chilli powder on top. |

Place the plate in the preheated steamer. Cover with a lid and steam for 20 minutes on high heat. |

In a pan, heat 1 tbsp oil. Add mustard seeds and a pinch of hing. Once the mustard seeds crackle, add safed til. Pour the tadka over the steamed dhokla. |
