Ingredients

2 Tbsp chia seeds
2 cups yogurt
1/2 cup water
1 medium cucumber, finely chopped
2 green chillies, finely chopped
Fresh coriander leaves, chopped
Pomegranate seeds
1 instant oats
Salt, to taste
Oil or ghee For Tadka-
1 Tsp mustard seeds (rai)
2 Tsp urad dal
2 dry red chillies
1 Tbsp raw peanuts
6-7 cashew pieces
Few curry leaves
Pinch of asafoetida

Soak 2 tablespoons of chia seeds in water for half an hour.

In a bowl, take 2 cups of yogurt. Add 1/2 cup water and mix well to adjust the consistency. Add the soaked chia seeds.

Mix in the finely chopped cucumber, green chillies, coriander leaves, and pomegranate seeds.

Dry roast 1 cup of instant oats in a pan until lightly browned. Let the oats cool down completely.

Once cool, add the oats to the yogurt mixture and mix well. Add salt to taste.

Heat oil or ghee in a pan. Add 1 teaspoon mustard seeds and let them splutter.

Add 2 teaspoons urad dal, 2 dry red chillies, 1 tablespoon raw peanuts, and 6-7 cashew pieces.

Add a few curry leaves and a pinch of asafoetida. Once the tadka is ready, pour it over the chia oats yogurt mixture.
