“Veg Muthiya” is a popular and flavorful Indian snack or side dish that originated in the state of Gujarat. It’s made from a mixture of vegetables, spices, and flour, which is shaped into cylindrical or oval dumplings, steamed or shallow-fried, and then sliced into pieces for serving. 

The combination of vegetables, flour, and spices in veg muthiya creates a balanced snack that provides carbohydrates, fiber, protein, and essential nutrients in one serving.

Mix 1 cup finely chopped cabbage, 1/2 cup finely chopped carrot, 3 finely chopped spring onions, chopped ginger, garlic, green chilies, and coriander leaves in a bowl.
Add 1/2 tsp turmeric powder, 1 tsp coriander powder, and salt to taste.
Let the mixture sit for 10 minutes.
Add 1 lime juice and 2 tsp sugar (optional).
Mix in 1/2 cup semolina (suji/rava) and 1 cup wheat flour (gehu ka atta).
Gradually add water to make a thick batter.

Apply oil to your palms and shape the mixture into cylindrical rolls.
Arrange the rolls on a greased food strainer.
Steam for 20 minutes in a preheated steamer until a knife comes out clean.
Heat 1 tbs oil in a pan.
Add mustard seeds (rai), a pinch of asafoetida powder (hing), sesame seeds (til), and curry leaves.

Sprinkle Kashmiri red chili powder and add cut muthia pieces.
Cook for 5 minutes to get a crispy layer.
Garnish with fresh coriander.
