Vegetable Pad Thai is a delicious Thai stir-fried noodle dish that’s both flavorful and packed with vegetables.It’s a tasty and satisfying dish that can be customized with your favorite vegetables and protein sources for a delicious meal.

For Thai sauce, mix 2 tbs Tamarind Pulp, 1 tbs Jaggery, 2 tsp Dark Soya Sauce, and 2 tbs Light Soya Sauce in a bowl. Set aside.
Heat oil in a pan and fry small tofu cubes with a pinch of salt until golden-brown. Transfer to a bowl.
In the same pan, add a spoonful of oil and sauté finely chopped garlic and thinly sliced onions.
Add soaked noodles (for one serving), sprinkle chili flakes, and add 2 tbs of the prepared sauce.

Add a little water and cook on medium heat for 5 minutes.
Stir in beansprouts and chopped spring onions.
Transfer to a serving plate and garnish with roasted peanuts, a lemon slice, red chili powder, and beansprouts.
