I am giving the traditional Gujarati Handvo a brand new, super healthy, and nutritional avatar! By swapping out regular white rice or suji for complex carbs and protein-rich whole ingredients, I have turned this classic snack into an absolute powerhouse breakfast.
.
Nutritional Value (Per Serving):
* Protein: ~15g
* Fiber: ~6.5g
* Carbohydrates: Complex, slow-releasing carbs from whole grains
* Micronutrients: Rich in Calcium, Iron, and Magnesium
Why I Curated This Recipe:

A. Clean Plant Protein: I used Moong and Kala Chana to give you up to 15g of vegetarian protein per serving, keeping you full and fueled for hours.
B. Millet Goodness (Ragi Atta): I added Ragi because it is rich in calcium, iron, and dietary fibre, making it excellent for bone health, steady energy levels, and great digestion.
C. Fibre & Vitamin Boost: My vibrant mix of fresh veggies ensures you get a wonderful dose of essential micronutrients and antioxidants.
D. Gut Friendly: I mixed it with sour curd to aid metabolism and make it incredibly light and easy on the stomach.
Absolutely no compromise on taste, but maximum points for health! Save this recipe right now, try it out, and share the goodness with your family.
