Ingredients

1/4 cup Fresh Curd (Dahi)
1/2 Tsp Turmeric Powder (Haldi)
1 Tsp Red Chilli Powder
1 Tsp Coriander Powder (Dhaniya Powder)
1 Tsp Garam Masala
2-3 Garlic Cloves
1 Green Chilli
1 small Ginger Knob
2 spoon Oil
2 spoon Butter
1 spoon Gram Flour (Besan)
Kasuri Methi
1 Tsp Cumin Seeds
1 finely chopped medium Onion
Salt as per taste
3 finely chopped medium Tomatoes
300 gm Cottage Cheese (Paneer crumbled with hands)
Warm Water (as required)

Amritsari Paneer Bhurji is a flavorful Indian dish made from crumbled paneer (cottage cheese) sautéed with spices, onions, tomatoes, and green chilies. The dish is often garnished with fresh coriander and served with Indian breads like paratha or naan. It’s a quick and delicious meal that combines the creaminess of paneer with robust spices. Perfect for breakfast or a light dinner, it captures the essence of Punjabi cuisine.

In a mixing bowl, combine 1/4 cup fresh curd with 1/2 teaspoon turmeric powder, 1 teaspoon red chili powder, 1 teaspoon coriander powder, and 1 teaspoon garam masala. Mix well and set aside.

Coarsely crush 2-3 garlic cloves, 1 green chili, and 1 small ginger knob.

Heat 2 tablespoons of oil and 2 tablespoons of butter in a pan. Add 1 tablespoon of besan (gram flour) and sauté until it turns light golden. Add a pinch of kasuri methi (dried fenugreek leaves) and 1 teaspoon of cumin seeds.

Add the crushed garlic, green chili, and ginger to the pan, followed by 1 finely chopped medium onion. Season with salt and fry until the onion turns light golden brown.

Add 3 finely chopped medium tomatoes and cook until they soften. Stir in the prepared curd mixture and cook on medium heat.

Add 300 grams of crumbled paneer to the pan. Mix well and add a little warm water if the mixture is too thick. Garnish with chopped coriander, ginger juliennes, green chilies, and additional chopped tomatoes on top.
